CLAYS™ BD
Cleaning & Hygiene Policy 

16.12.25

1. Purpose

The purpose of this policy is to ensure a clean, hygienic, and safe environment at all CLAYS™ BD outlets to protect food safety, customer health, employee well-being, and brand reputation.

 

2. Scope

This policy applies to all CLAYS™ BD locations, including:


• Kitchen & food preparation areas
• Dining & customer areas
• Drive-thru & service counters
• Bar & beverage stations
• Washrooms
• Storage areas (dry, chiller, freezer)
• Waste disposal zones

 

 

3. Responsibilities

Outlet Manager / Shift In-Charge:
• Ensure cleaning schedules are followed
• Verify completion of daily & closing checklists

Kitchen & Service Staff:
• Maintain cleanliness during operations
• Perform assigned cleaning duties

Facilities / Maintenance Team:
• Deep cleaning, equipment sanitation & pest control coordination

 

4. Cleaning Frequency Standards

A. Continuous Cleaning (During Operation):


• Wipe food prep surfaces after each task
• Clean spills immediately
• Maintain clean service counters
• Dispose waste regularly to avoid overflow



B. Daily Cleaning (End of Shift):


• Clean & sanitize all food contact surfaces
• Wash utensils, equipment parts & tools
• Mop floors with approved disinfectant
• Clean trash bins and replace liners
• Clean washrooms (toilets, basins, mirrors)

C. Weekly Cleaning:


• Deep clean kitchen floors, walls & drains
• Clean exhaust filters & grease traps
• Sanitize refrigerators & storage racks
• Clean ceiling corners, fans & light covers

D. Monthly / Periodic Cleaning:


• Deep cleaning of ovens, fryers & grills
• Pest control service (as per contract)
• AC filter cleaning
• Store room & external area washdown

 

 

5. Cleaning Chemicals & Tools

• Only food-grade approved chemicals shall be used
• Color-coded mops & cloths:
- Kitchen – Red
- Dining – Blue
- Washroom – Yellow
• Chemicals must be properly labeled and stored away from food items

 

 

6. Personal Hygiene Rules

• Staff must wash hands before food handling, after restroom use, and after handling waste
• Hairnets, gloves & clean uniforms are mandatory
• No staff may work while sick or with open wounds

 

 

7. Waste Management

• Segregate waste where applicable
• Waste bins must have lids
• Waste must be removed daily
• No waste storage inside kitchen overnight

 

 

8. Monitoring & Records

• Daily Cleaning Checklist must be signed per shift
• Weekly & monthly cleaning logs to be maintained
• Non-compliance will be addressed with corrective action

 

 

9. Compliance

This policy aligns with food safety best practices, local health & hygiene regulations, and internal CLAYS™ BD brand standards. Failure to follow this policy may result in disciplinary action.

 

 

10. Policy Review

This policy shall be reviewed annually or as required.
